If you’ve been following along, you’ll know my mom is visiting. The other day she cooked up some delicious egg sandwiches for us for breakfast. They turned out so good, I asked her for the recipe to post below. It’s super easy and quick.
Egg sandwich on my aunt’s Jadite plates
Ingredients Needed:
Take 2-3 slices of your honey smoked turkey breast pieces and chop them up. Chop a quarter of a bell pepper up into small pieces and chop a piece of onion, a teaspoon’s worth is enough. Cut slices of your cheese (enough to cover your egg sandwiches) and set to the side.
Add the turkey, bell pepper and onion to an oiled pan and fry for 2-5 minutes on medium/medium high setting, stir as needed.
In a small bowl, whisk 3 eggs until mixed thoroughly. Add the eggs to your mix of ingredients in the pan and stir to combine them with the eggs.
Add pepper and a pinch of parsley as desired. When ready add your slices of cheese to two pieces of toasted bread. This part can get messy so lay out a paper towel to catch anything that falls. Scoop the eggs so they lay on top of the cheese. Finish by adding the top piece of toast. Done!
Recipe makes 2 sandwiches.
